BabyCorn Kalimirri
Babycorn Kalimirri as the name indicates has 2 main ingredients baby corn and Kali mirch. I used canned baby corn which I found in Indian grocery store. Only one think you wanna make sure in this dish is don't let any ingredient take away the highlight from your main ingredients. I cook based on approximation, smell and look & feel of the dish so please excuse me if I am not able to give you exact measurements. Adjust black pepper as per your family preference for spiciness but as we are not adding any green or red pepper this is our only main spice and just a little garam masala in the end. Also we are adding cardamom powder to give it a distinguished flavor. Also all other veggies quantity are very little compared to baby corn as I mentioned we want to highlight that ingredient.

- Rinse & Boil baby corn for 2 min in water with a pinch of salt (we don't need to fully cook but just a little bit)
- Soak Cashew in water for 10 min
- Put 1 tbsp butter & 1 tbsp oil in a pan and add some jeera followed by chopped white onion, wait till it turns translucent, then add soaked cashews, cook for another 2 min then make a paste of this mixture
- In same pan add 1 tbsp of butter, add 1 tbsp of cardamom powder, 2 tbsp black pepper, salt, 1 tbsp kasturi methi, then add onion cashew paste, cook for 2-3 min
- Add mixed bell peppers and baby corn, cook on slow flame for 10-15 min, till baby corn is almost cooked, now add peas and finely diced paneer, add little bit of boiling water if needed to dilute it a little, cook for another 3-4 min
- Add garam masala, cook for 1 min and serve it, garnish with cilantro and mixed bell peppers
