Coconut stuffed Tomatoes

Coconut stuffed tomato is an excellent main dish to compliment other gravy dishes in your menu. I have made variety of stuffed tomatoes with paneer, potatoes, besan peanuts mix before but coconut filling is extremely light dish to eat and has an interesting sweet and sour flavor. It's a dish which will look really good in your dinner or lunch spread or it can be a simple dish you can have with paratha as a wholesome meal.

Here are few tips for this dish:

  • Choose nice ripe, firm and round tomatoes 
  • Make sure coconut powder is fresh and don't have any pungent smell
  • When you scoop out flesh from tomatoes make sure it's all removed otherwise it will get soggy before it's fully cooked
  •  I used non stick wide pan as that took just a spoonful of oil as you don't stir or move this for 15-20 min so wanted to make sure it doesn't stick at the bottom which will ruin it when you will transfer it to serving bowl
  • Use cake serving spatula to life and transfer to serving bowl

    • Cut the top part of tomatoes and gently scoop out all flesh 
    • Cut just a little bit from bottom if needed so that all tomatoes can stand 
    • Pat dry them a little from inside with a paper napkin
    • Make coconut stuffing by mixing all ingredients - fine shredded coconut, fine chopped red onion, salt, pepper, turmeric, rai, jaggery powder, cilantro (just leave a little for garnish) 
    • Fill up the tomatoes with this filling, don't press too hard just make sure they are filled till top by gently pressing it
    • Add oil in a not stick wide pan, spread it all over and gently put tomatoes in a circle and cover it and let it cook for 10 min on slow flame, check once and gently move them to make sure they are not sticking (do not saute or lift them), now add remaining filling mix whatever is left all over the space in between tomatoes and cook on slow flame for another 5 min. Check if they look tender, if needed cook for another few min but ideally they should be cooked by now.
    • Gently lift them using cake serving spatula and use a spoon to support if needed, arrange them in serving bowl without breaking them. Add filling in the serving bowl as well on side.
    • Garnish with cilantro and serve :)
